Lynher Dairies' award winning Cornish Yarg is a creamy firm cheese whch comes in 2 varieties, Nettle and Wild Garlic.
The Nettle Yarg is fresh and lemony, with a creamy texture under its natural rind but slightly crumbly in the core. The nettle leaves, which attract naturally occurring moulds, are brushed onto the cheese in concentric circles. As the cheese matures, the edible nettle rind imparts a delicate, mushroomy taste and develops its unique bloomy white appearance.
The Wild Garlic Yarg is wrapped in the pungent leaves that arrive in the Cornish woodlands each spring. They impart a gentle garlicky flavour and their moisture gives the cheese a slightly firm texture. It’s hard to believe, but Wild Garlic Yarg is made to exactly the same recipe as the traditional nettle wrapped Yarg. The striking difference in taste is all down to the leaves, and their effect on the cheese as it matures.
Both are available in cut pieces of not less than 250g. or not less than 500g
